- 4 cups beef or chicken broth

- 2 bay leaves

- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Heat the oil in a large pot or Dutch oven over medium-high heat.
- Sear the meat on all sides until browned, about 5-7 minutes. Remove and set aside.
- In the same pot, sauté the onions, garlic, carrots, and celery for 3-4 minutes.
- Return the meat to the pot and add the potatoes.
- Pour in the broth, water, Worcestershire sauce, and Guinness (if using). Stir to combine.
- Season with salt, pepper, thyme, and bay leaves. Bring to a boil.
- Reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the meat is tender.
- Remove the bay leaves, adjust seasoning if needed, and garnish with fresh parsley before serving.
