  • 2 celery stalks, chopped
  • 4 cups beef or chicken broth
  • 1 cup water
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 tablespoon Worcestershire sauce (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  • Heat the oil in a large pot or Dutch oven over medium-high heat.
  • Sear the meat on all sides until browned, about 5-7 minutes. Remove and set aside.
  • In the same pot, sauté the onions, garlic, carrots, and celery for 3-4 minutes.
  • Return the meat to the pot and add the potatoes.
  • Pour in the broth, water, Worcestershire sauce, and Guinness (if using). Stir to combine.
  • Season with salt, pepper, thyme, and bay leaves. Bring to a boil.
  • Reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the meat is tender.
  • Remove the bay leaves, adjust seasoning if needed, and garnish with fresh parsley before serving.
