Soft, chewy, and made with wholesome ingredients like oats, nut butter, and protein powder, they’re great for post-workout snacks or healthier desserts. Ingredients

  • 1 cup rolled oats
  • ½ cup vanilla or chocolate protein powder
  • ½ cup almond butter (or peanut butter)
  • ⅓ cup honey (or maple syrup)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • Pinch of salt

 

  • ⅓ cup dark chocolate chips (optional)

Instructions

  • Preheat Oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix Wet Ingredients: In a large bowl, combine almond butter, honey, egg, and vanilla extract. Stir until smooth.
  • Add Dry Ingredients: Add oats, protein powder, baking soda, and salt. Mix until a thick dough forms. If using, fold in chocolate chips.
  • Shape Cookies: Scoop tablespoon-sized balls of dough and place on the baking sheet, flattening them slightly.
  • Bake: Bake for 8-10 minutes, or until edges are golden brown. Let cool on the pan for 5 minutes before transferring to a wire rack.

 

  • Serve: Enjoy immediately or store in an airtight container for up to 5 days.

Notes

  • For extra flavor, add a pinch of cinnamon or a tablespoon of chia seeds.
  • Use plant-based protein powder to make these cookies vegan-friendly.
