For the Onions & Beans:
- 1 tablespoon olive oil
- 1 large onion, sliced
- 1 can (15 oz) white beans, drained and rinsed (cannellini or great northern)
- 2 cloves garlic, minced
- ½ teaspoon cumin
- ½ teaspoon smoked paprika
- Salt and pepper, to taste
- 2 tablespoons fresh parsley (optional garnish)
Instructions
- Season the Steak: Pat the steak dry and season both sides with garlic powder, smoked paprika, salt, and pepper.
- Sear the Steak: Heat olive oil in a large skillet over medium-high heat. Sear the steak for 3-4 minutes per side (for medium-rare), or longer if desired. Remove steak from skillet and let it rest while you prepare the onions and beans.
- Caramelize Onions: In the same skillet, add 1 tablespoon olive oil and sliced onions. Cook over medium heat, stirring occasionally, until soft and golden, about 8 minutes.
- Add Beans & Seasoning: Stir in garlic, beans, cumin, smoked paprika, salt, and pepper. Cook for 2-3 minutes until heated through.
- Slice & Serve: Slice the rested steak into strips. Serve on a plate with the onions and beans on the side. Garnish with fresh parsley if desired.
