For the Jerk Seasoning Paste:

  • 2 Scotch bonnet peppers (or habaneros, seeded for less heat)
  • 3 cloves garlic
  • 1-inch ginger (grated)
  • 3 green onions (chopped)
  • 1 tablespoon fresh thyme (or 1 teaspoon dried)
  • 1 tablespoon soy sauce
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon lime juice

Instructions

1. Make the Jerk Paste:

  1. In a food processor or blender, combine Scotch bonnet peppers, garlic, ginger, green onions, thyme, soy sauce, Worcestershire sauce, and lime juice. Blend into a smooth paste.

2. Marinate the Wings:

  1. In a large bowl, mix the jerk seasoning paste with olive oil, soy sauce, apple cider vinegar, brown sugar, lime juice, and dry spices.
  2. Add the chicken wings, ensuring they are well coated. Cover and marinate for at least 2 hours (preferably overnight) in the refrigerator.

3. Cook the Wings:

Grilling Method:

  1. Preheat the grill to medium-high heat (about 375°F/190°C).
  2. Grill wings for 20-25 minutes, flipping occasionally, until charred and cooked through (internal temperature of 165°F/74°C).

Oven-Baked Method:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
  2. Arrange wings on the rack and bake for 35-40 minutes, flipping halfway through, until crispy and cooked through.
  3. For extra char, broil for the last 2-3 minutes.

4. Serve:
