- 2 Scotch bonnet peppers (or habaneros, seeded for less heat)
- 3 cloves garlic
- 1-inch ginger (grated)
- 3 green onions (chopped)
- 1 tablespoon fresh thyme (or 1 teaspoon dried)
- 1 tablespoon soy sauce
- 1 teaspoon Worcestershire sauce
- 1 tablespoon lime juice
Instructions
1. Make the Jerk Paste:
- In a food processor or blender, combine Scotch bonnet peppers, garlic, ginger, green onions, thyme, soy sauce, Worcestershire sauce, and lime juice. Blend into a smooth paste.
2. Marinate the Wings:
- In a large bowl, mix the jerk seasoning paste with olive oil, soy sauce, apple cider vinegar, brown sugar, lime juice, and dry spices.
- Add the chicken wings, ensuring they are well coated. Cover and marinate for at least 2 hours (preferably overnight) in the refrigerator.
3. Cook the Wings:
Grilling Method:
- Preheat the grill to medium-high heat (about 375°F/190°C).
- Grill wings for 20-25 minutes, flipping occasionally, until charred and cooked through (internal temperature of 165°F/74°C).
Oven-Baked Method:
- Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
- Arrange wings on the rack and bake for 35-40 minutes, flipping halfway through, until crispy and cooked through.
- For extra char, broil for the last 2-3 minutes.
4. Serve:
- Garnish with chopped green onions and lime wedges. Serve with ranch or a cooling dip if desired.
